National Graham Cracker Day

Hello Everyone!

I hope you all had a great day yesterday and had all the S’mores you could stomach! The funny thing about S’mores, is that for all the build up and anticipation, most times you only enjoy them once. From then on, you enjoy all the components separately. It’s usually the chocolate that goes first, then the marshmallows and the graham crackers seem to stick around until you come across them again and realize they expired.

Now, I don’t know if you’re like me, but I hate when stuff goes to waste, so I decided to share with you a recipe for Doggie Grahams. My German shepherd mix, Indiana, has been a total wreck since the ever wonderful firework shows began on Saturday night. I figured that making some dog treats for her would help her get over her fear of going outside. Plus the treats can be cut into cute shapes or just simply using a pizza cutter, after rolling out thin, to cut the dough into small training treats.

So here we go:

  •    2 Cups Graham Cracker Crumbs
  • 1 Cup All-Purpose Flour
  • 1 Tbsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 Cup Corn Oil
  • 1 Cup Milk
  1. Preheat oven to 425 Degrees F. Grease Cookie Sheets.
  2. In a mixing bowl, combine graham cracker crumbs, flour, baking powder and salt. In a small bowl, or measuring cup, mix oil and milk and stir into flour mixture.
  3. Turn dough out onto a lightly floured surface and knead lightly until soft and well mixed. Roll out dough to 1/2 inch thickness and cut into desired shapes. Place on prepared baking sheets 1″ apart. Bake 10 minutes, then turn over and bake for another 5 minutes. Cool completely. Store cooled biscuits in fridge or freezer.

Hello Everyone and Happy National Stay Out of the Sun Day!

 

Now I know that with tomorrow being the 4th of July, we all probably will be outside most of the day. If you were one of the lucky ones to have today off, myself included, you might start the outside activities today.

I live in AZ, and if you have ever heard one thing about AZ it’s probably that it is hot, like really hot. The most important things to remember here is water, water, water,sunscreen, water, water, hat, water and oh yeah, water. Nearly everyday, there is a news story about someone being hospitalized due to heat related illness, and it’s a total bummer. Below I shared a few ways to help beat the heat. Keep in mind, that I am not a medical professional, these are merely tips for keeping cool in the dead of summer.

  • Always keep water with you. Even if you’re only going out for a few minutes, take a cooler full of water and if you’re taking your dog(s) with you, take a water bowl.
  • Wear thick bottomed shoes, nothing feels as bad as the melting asphalt coming through the bottom of your shoes. *Also, if it’s too hot for your feet, it is way yo hot for your dogs feet!*
  • Don’t wear dark clothing.
  • Wear light colored airy clothes, if there is a light breeze, it will offer some relief.
  • Never EVER leave children or pets in an enclosed vehicle or near a pool, or body of water unattended. Every year there are drownings that are completely avoidable.
  • Slow down, Avoid strenuous activities taking place outside. EX: Hiking at the hottest point of the day, use common sense. When you have to be rescued, you are putting other people at risk, don’t be that person….that person sucks.
  • If you work outside or have to go outside for any reason, I would suggest investing in a cooling neck wrap. Some people use them for marathons, they are light weight and just have to moistened to offer a lot of relief. *You can find these at Walmart, Target or any sporting goods store.
  • If you want to stay cool by lounging in the pool, Otter Pops will be your best friend, they offer a variety of flavors and their frozen.
  • Wear Sunglasses: The lighter your eyes are, the more sensitive they are to sunlight.
  • Wear a hat. Nobody likes a peeling sunburned scalp. 1. It hurts to brush your head and 2. it looks like dandruff.

5 Ways To Cure A “Snappy” Attitude

Hello Everyone!

 

This week has been pretty horrible so far, work has been incredibly stressful and warm and it really doesn’t help that the excessive heat warning keeps extending in AZ. At work I was told they didn’t appreciate my “snappy” attitude. To my knowledge, I didn’t have one but I took a deep breath and apologized anyway. There are some battles worth fighting but this, in my eyes, wasn’t one of them. Once I got home, I put in my headphones and mindlessly scrolled through Pinterest.

 

Yesterday, after I left work early, I decided to use my free time to write a few blog post. I have a lot of ideas, it’s just the actual writing of it that proves difficult. Anyways I figured I would share my top 5 ways to de-stress or in other words, cure a “snappy” attitude.

  1. Music:

Whether fast and uplifting or slow and calm, the point is to forget your stress and just focus on the music. (Check out my “Music Monday” post for some suggestions. “Ground Control” by All Time Low is quite amazing.)

2. Watch a Movie:

Any movie that you can mindlessly watch without overthinking is the best kind. My go to’s are Jurassic Park, Jurassic World, Jaws or pretty much any Disney movie.

3. Treat yourself

Sit down or go out and enjoy your favorite treat just for you. Don’t go overboard, unless you want to, up to you. My treat always has something with chocolate.

4. Workout:

Nothing super strenuous, sometimes when you stress workout, you stress out your body which is not good. Sometimes just taking a nice walk does the trick.

5. Sleep:

When all else fails, just take a bath or shower and just go to bed.

Music Monday

Hello Everyone!

I hope this Monday finds you all well and happy! Last week was all sorts of stupid, work issues, messed up schedules, starting a new adventure (one I’m really excited about) and a rather stressful cookie order/pick-up. I won’t go into detail but I really really really hope this week goes better. To kind of share what I’ve been up to, last weekend I did a quick trip to California with my family for my little sister’s birthday, last Monday my mom and I got an order on our Etsy store. Then this passed weekend, on Saturday I got fitted for “fancy” running shoes, not really fancy just way more appropriate for the type of training I will be starting very soon. I ended up with Brooks Ghost 9’s and I’m very excited about that, considering I’m now a Brooks endorsed runner. Please save the congratulations, anyone can become one. After getting the shoes, I went shopping with my sisters then with my mom. Then on Sunday, father’s day, we made breakfast for my dad, then took him to see Cars 3, review coming soon, then dinner at a local Mexican food restaurant.

So busy and sometimes irritated but overall good times on my end. I thought we could try something new this Monday, probably won’t be every Monday but just a fun little feature. The title kind of gives it away, Music Monday, where I share my Top 5 songs (of the week or month) and hopefully you’ll share yours!

So without further ado, here are my top 5 of this week:

Pick Your Poison…

Hello!

I hope you all have been doing well so far this week. It has been crazy busy for me, so much so, I can’t remember what I did Monday, haha! On Tuesday we celebrated my little sister’s 17th birthday. We went to Top  Golf for the first in Scottsdale, we weren’t really sure what to expect but we had a really great time. We can’t wait to go back!

Anyways, today is National Pick Your Poison Day, not literal poison. Most of the time it’s referring to alcohol but that’s not what I’m talking about today. It is open to any interpretation when it comes to making decisions.  Below you will find two of my favorite guilty pleasure recipes, my poison if you will. And you will, you guessed it, pick your poison.

 

Cookies ‘n’ Crème Krispies

  • 1/4 Cup (1/2 Stick) Unsalted Butter
  • One 10 oz. Package Marshmallows
  • 5 Cups Puffed Rice Cereal
  • 2 1/2 Cups Crème Filled Chocolate cookies, cut into quarters
  1. Spray a 9×13 inch pan with cooking spray and set aside.
  2. Heat the butter in a large nonstick saucepan over low heat until melted. Add the marshmallows and continue cooking, stirring until smooth, 2 to 3 minutes.
  3. Remove the pan from the heat, add the cereal and cookies and stir gently just until mixed to avoid breaking up the cookies any further.
  4. Press mixture evenly into prepared pan. Cool completely until set, about 20 minutes, before cutting into 3×3 1/4 inch bars.

 

Death By Chocolate Brownies

  • 1/2 Cup Salted Butter
  • 8 oz. Coarsely Chopped Semisweet Chocolate
  • 1 Cup Sugar
  • 3 Eggs, Cold
  • 1 tsp Vanilla Extract
  • 3/4 Cup All-Purpose Flour
  • 1/4 tsp Salt
  •  1 1/2 Cups Semi-Sweet Chocolate Chunks or Chocolate Chips
  1. Melt the butter and chopped chocolate in a medium saucepan over medium heat, stirring constantly, about 5 minutes. Remove from heat, pour into a large bowl, and allow to slightly cool for 10 minutes.
  2. Preheat oven to 350 Degrees F. Line bottom of an 11×7-inch baking pan with aluminum foil, leaving an overhang on all sides. Set aside.
  3. Stir sugar into the cooled chocolate/butter mixture. Add in the eggs one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the flour and salt, then the chocolate chunks until combined. Pour batter into prepared pan and bake for 37-45 minutes, or until the brownies begin to pull away from the edges of the pan.
  4. Allow the brownies to cool completely in the pan set on a wire rack. Lift the foil out of the pan using the overhang on the sides, and cut into squares. The brownies will stay fresh in an airtight container at room temp for 1 week

Donut Worry, Be Happy

Hello Everyone!

I hope you are all doing well! I have some exciting news…..On Wednesday evening, I made the jump and signed up for the 2017 Super Heroes Half Marathon Weekend, which includes:

  • The Spider-Man 5K: Friday, November 10, 2017
  • Infinity Gauntlet Challenge:
  • Thor 10K: Saturday, November 11, 2017
  • Avengers Super Heroes Half Marathon: Sunday, November 12, 2017

So all of that equals to 22.4 miles over the span of 3 days. I’ll be arriving in Anaheim on my 28th birthday, November 9, and going to packet pick-up and the expo where I will most likely spend way too much money. The following day I will be getting up really freaking early and doing a 5k, I’ve done quite a few so I’m not really worried about it. Once that’s completed, I’ll probably try to nap, go get some breakfast and then go to Disneyland and California Adventure. After a few hours I’ll need to go to bed, to wake up really freaking early again to do the Thor 10k, which will be my first 10k ever. After that, nap, breakfast and beach. Then sleep to get up for the last time on this trip, you guessed it, really freaking early and do my first runDisney half marathon but second overall half marathon. From all of that, I will receive 4 medals, I’m excited but nervous but a good nervous.

I think because of this we should all celebrate by having a doughnut. And if you don’t want to celebrate with me, have a doughnut anyway for National Doughnut Day!

As a sweet deal, you can go to Dunkin Donuts and receive a free doughnut when you purchase any beverage. If you would rather work for your reward, below you will find one of my favorite recipes for cake doughnuts.

  • 4 Cups All-Purpose Flour
  • 1 Cup Sugar
  • 3 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 teaspoon Nutmeg
  • 1 Cup Buttermilk
  • 1/4 Cup Margarine or Butter, Melted or 1/4 Cup Oil
  • 1 teaspoon Vanilla
  • 2 Eggs, Slightly Beaten
  • Oil for Deep Frying

In large bowl, combine flour, sugar, baking powder, baking soda, salt and nutmeg. Stir in remaining ingredients except oil for frying, just until dry ingredients are moistened. If desired, refrigerate dough for easier handling.

Fill large saucepan or electric skillet 2/3 full with oil. Heat to 375 Degrees F. On a well floured surface, knead dough 1 to 2 minutes or until dough is no longer sticky. Roll half the dough at a time to 1/2 inch thickness; cut with floured doughnut cutter. With pancake turner, slip doughnuts and holes into hot oil. Fry doughnuts and holes 1 to 1 1/2 minutes on each side or until deep golden brown. Drain on paper towel. If desired, roll doughnuts and holes in powdered or granulated sugar, cinnamon-sugar mixture or drizzle with glaze Makes about 30 doughnuts.

Hello Again!

Hello!

I hope you are all doing well!

I have decided to change stuff around. For starters, I changed the name, this blog is now called Might Run For Cupcakes. It ties in my love of baking, as well as, my crazy idea of doing marathon’s for fun.

I have also made the jump to .com, in hopes that I will get more traffic. I truly enjoy blogging but when I check my stats and see zero, it’s kind of a blow to my blogging confidence. I’m not giving up though, so if any of you have any tips or suggestions, please share! Any and all would be greatly appreciated!

Do You Know What Today Is?

Today is National Twilight Zone Day. There is no real explanation behind who created or why this day exists, it’s not about or because of the show, it was just made popular by it.

The show aired in 1959 and ended in 1964, it had 5 seasons and 156 episodes. Every year on New Year’s and the Fourth of July SyFy does a marathon. I knew of the show, not just because of the Tower of Terror but because one of my old friends loves it. Anyways, our families used to spend Christmas Eve and New Year’s and the occasional Independence Day, going out to dinner and fireworks. Before going to dinner we would hang out at one of our houses. And, you guessed it, we would watch the Twilight Zone. I don’t remember a lot of episodes but one in particular has stuck with me for years.

The episode is called “The Eye Of The Beholder”, it aired for the first time on November 11, 1960. Basically, the story is about a woman that keeps having surgery to improve her looks because she is unhappy with her appearance. After her last legally allowed surgery, she begs her doctor to remove the bandages early, to which he finally gives in. When they are removed it reveals that the surgery did nothing but it finally shows the faces of the nurses and doctors, that up until that part had been hidden in the shadows, that they have for lack of a better term, pig faces. So, she freaks out, which who wouldn’t? I’m not going to give away the ending but she gets exiled. I encourage you to watch it.

Perhaps it will give you nightmares like it did to my 10 year old self, I couldn’t sleep for days. I can’t even watch it today because of those nightmares…but I hope you like it!
